We’ve written about margarita recipes before, here and here.
Those are all wrong, according to Carl. Instead, here’s what you combine:
2 parts 100% Agave Tequila.
1 part Agave Nectar
1 part lime juice (from freshly squeezed limes
1 part water (pure spring water would be best)
Mix. Poor over ice. Garnish with a slice of lime. Salt the glass…or not…as you prefer.
Right off the bat, I was a little bit confused. What the heck is 100% Agave Tequila?! And along comes Wikipedia to my rescue…
There are two basic categories of tequila: mixtos and 100% Agave. Mixtos use up to 49% of other sugars in the fermentation process and Agave taking up the remainder. Agave sugar is glucose-based, and is easier for the human body to break down. Mixtos use both glucose and fructose sugars.
There is a very distinctive taste difference between the different types of tequila. The most notable is a “bite” for which tequila is often remembered. This “bite” is a characteristic of lower quality mixto tequilas, which use additives – commonly grain alcohols – that are less expensive than 100% agave.
OK, so what’s Agave Nectar? Turns out it’s a syrup made from the same plant used to make Tequila (Agave tequilana azul).
I’ll skip the chemistry, but suffice to say there’s a lot about sugar and—particularly for the tequila—fermentation.
One premium brand of tequila, Partida, even has a whole website about this margarita recipe. Their ratios are ever-so-slightly different, but I think 2-1-1-1 is pretty easy to remember, so I’ll stick with Carl’s recipe.

Since my name is on this, allow me to make a quick correction.
The recipe is: 2-1-2
2 parts 100% Agave Tequlia
1 part of agave nectar (cut 50% with water)
2 parts freshly squeezed lime juice
Mix together, add ice, shake and drink.
If it is too sweet, add a tad more lime juice.
If it is too sour, add a tad more of the 50/50 Agave nectar/water mix.
Not that I would have personal experience, but you can drink these non-stop from 3 pm to 10 pm and NOT have a hangover the next day.
The natural sugars and lime seem to agree with the human body better than the bottled stuff that can last years without expiring.
BTW, Agave nectar is great tasting stuff. Try it on pancakes and waffles instead of syrup or instead of honey in a hot drink.

But Carl, I thought the lime juice was mixed about 50/50 with water? That’s why I modified it slightly.
